The family estate, Domaine Slapšak, is located in Telče, in the heart of the Dolenjska hills. The sunny slopes of the estate, at an altitude of 500 m and the marly slate and limestone soil, provide favorable conditions for the production of clear and crystal wines. In our cellar, elegant sparkling wine is created, and during exceptional harvests, also Blaufränkisch, which forms its character in an oak barrel. The expertise of Slapšak's French winemaker, who has worked in major Champagne houses, let them develop a unique wine style in Slovenia with the use of reserve wine. Made from grape varietals Pinot Noir, Chardonnay, and Žametna črnina (an endemic Slovenian varietal), Brut Réserve sparkling wine reveals year after year the subtle identity of our terroir Dolenjska. But most importantly, Brut Réserve is a wine that perfectly combines power, finesse, and elegance, which are the cornerstones of Slapšak's house style. Tasting notes On the nose, this wine exudes aromas of citrus fruit and ripe pear coming from the Chardonnay. On the palate, the attack is straight and accurate, followed by a bright freshness. The Pinot Noir then comes in with its exquisite volume and smoothness. The finish is complex and elegant, thanks to the kindness of the reserve wines. Serving suggestions Ideal for an aperitif. Brut reserve will also pair perfectly with a raw scallop carpaccio, poultry with truffle and cream, traditional Slovenian dumplings with cottage cheese (struklji s skuto), and even with a pressed cheese from sheep’s milk. BRUT ROSÉ
Vintage: Brut non-vintage Variety: Žametna črnina (blanc de noir) 100 % Winemaking: Minimum 20% reserve wine Natural settling for clarification No filtration and no discoloration Malolactic fermentation Very low sulfur content Aging on lees: Minimum 15 months Dosage: 7 g/l Brut Rosé has been one of the best winemaking experiences for Slapšak's French winemaker. The local grape variety “Žametna črnina” (“velvety black”) was a complete unknown to him before arriving in Slovenia. But after examining it, he quickly saw its sparkling potential. Still, when he started the elaboration of a sparkling rosé from this variety in 2012, he did not expect the result to be so intensely fruity and elegant at once. The minimum 15 months aging on lees in the bottle confirmed the winemaker’s firsts impressions and gave this wine its full personality and creaminess in the mouth. Tasting notes With its delicate pink color with violet hues, Brut Rosé is distinguished by its intense aromas of fresh red fruit reminiscent of the pomegranate. On the palate, it is remarkably elegant and extremely fresh with a characteristic touch of gooseberries. Thanks to its light dosage, the finish is delicate and “gourmand”. Serving suggestions Brut Rosé is ideal for an aperitif, but it is also the perfect company for a “dance all night” party. At the table, Brut Rosé would go nicely with a strawberry salad or salmon “en papillotte”. Brut Rosé is also sublime with fresh desserts with a touch acidity, such as the traditional Slovenian “snežene kepe” (snowballs), as interpreted by the chefs at Gostilna Repovž (Michelin’s Bib gourmand, Šentjanž, Slovenia) or a raspberry pie. BLANC DE BLANCS
Vintage: Brut non-vintage (up to two vintages in the blend) Variety: Chardonnay 100 % Winemaking: First press only (“heart of cuvée”) Partially barrel fermented Natural settling for clarification No filtration Malolactic fermentation Very low sulphur content Time of aging on lees: Minimum 40 months Dosage: 3 g/l “Blanc de Blancs” is a nod to the origins of Slapšak's winemaker. In his native Champagne, this denomination is used for wines that are elaborated exclusively from chardonnay. This noble variety is also a sponge of the terroir, and Slapšak's cuvée is the perfect example of this. All grapes come exclusively from Slapšak's Pesce lot, where chardonnays grow on flysch. This sedimentary rock (it consists of alternating sandstone and calcium-rich marl) is very crumbly and therefore suitable for Chardonnay’s deep roots exploration. This gives our Chardonnay a unique force and style, which expresses itself gradually during the 40 months it spends on lees in our cellar. Tasting notes Hawthorn, citrus, and ripe pineapple dominate the first nose. As the wine warms up in the glass, this chardonnay subtly develops its fullness and complexity. In the mouth, the wine opens on Viennese pastries and slightly toasted milk toffee and finishes on jelly quince. The finish is rich, vinous, and precise. Serving suggestions Serve it as an aperitif, accompanied by trout caviar blinis. With meals, this Blanc de Blancs can elevate tagliatelle with clams or carpaccio of scallops with just a drizzle of fresh Istrian olive oil. It also responds perfectly to a casual platter of seasoned dry Karst pršut (prosciutto) with parmesan shavings. Price: €22,00 |
BRUT NATURE ŽČ
Vintage: Brut non-vintage (up to two vintages in the blend) Variety: Žametna črnina 100 % blanc de noirs Winemaking: 100% blanc de noirs Only first press “heart of cuvée” Natural settling for clarification No filtration and no discoloration Partial malolactic fermentation Very low sulfur content Aging on lees: Minimum 60 months Dosage: 0 g/l Žametna črnina is famous for being the variety of the oldest vine in the world still producing fruit. You can see it in Maribor where they planted it over 400 years ago. In terms of winemaking, it doesn’t have quite the reputation it deserves. This endemic Slovenian grape varietal is widely planted in Dolenjska wine district. Slapšak's French winemaker discovered its potential for sparkling wine and realized it in Penina Brut Nature ŽČ. To do this, he opted for a strict selection of grapes from our best vineyard plots and a precise selection of the best juices – the “heart of cuvée” that they vinify in 100% stainless steel, followed by 5 years of aging on lees in the bottle. No artifice and therefore no dosage after disgorgement for un uncontrived experience of the uniqueness of Slapšak's most gastronomic cuvée. Tasting notes The color of Brut Nature ŽČ is straw gold with amber reflections – the signature of this “blanc de noirs”. The nose opens with delicate and tangy aromas, there is a nice touch of citrus with notes of mandarins, pomelo, and quince jelly. The mouth is vinous, very straight, almost mineral. The finish is very long and harmonious, dominated by a zest of freshness so characteristic of our terroir. Serving suggestions The sharpness of this cuvée marries perfectly with the iodine in seafood such as sea urchins and oysters, with which the wine interacts as a condiment. Thanks to its body, it is also a perfect accompaniment for sashimi or even soft goat cheese. Price: €19,00 |

Blaufränkisch
Vintage: 2017 Variety: Modra Frankinja (Blaufränkisch) 100 % Winemaking: Barrell fermented 100% (integral vinification) Aged in French oak barrel (18 months) Natural settling No filtration Very low sulfur content Blaufränkisch variety, known in Slovenia as Modra frankinja, has found the perfect growing conditions in the Dolenjska soil. Slapšak family only make this wine when the quality of the vintage permits the elaboration of a great product. Tasting notes The aromas in the nose are still young but reminiscent of complex black cherry, blackberry, and violet, gently mixed with hints of white pepper and vanilla. On the palate, the wine is powerful, suggestive of underwood and red fruits. Serving suggestions Served at 16°C, this Modra Frankinja (Blaufränkisch) will elevate a plate of classic spaghetti Bolognese or stewed beef. Its best pairing, in our experience, is a straight black angus on the grill. Price: €13,00 |
